Mastering Blind Tastings!

 

Many people approach blind tastings with trepidation and a fear of embarrassment. On the contrary, blind tastings of wines are very instructive, can be a lot of fun and may appeal to some people’s sense of competition!

Conducted by our chief instructor Mr Tan Ying Hsien, this course will teach you how to use the techniques of wine tasting, utilizing observations from sight, smell and taste, to make inferences about the grape varieties, origin, age and quality of a wine.

The course aims to help wine tasters make assessments of a wine’s qualities without any preconceptions that may be formed by knowing the label.

This tasting will be highly interactive, where participants will be asked to form their impressions and share them. There will be 8 wines served blind to the participants as well as the course instructor who will provide guidance and pointers on how to assess and identify the wines. Each tasting session will feature a different set of 8 wines.

It is a comprehensive foundation course to the professional world of wine. It introduces the learner to a systematic way to taste, describe, evaluate and recommend wines in marketable ways. Participants will receive a Statement of Attainment (SOA) in WSQ Study and Serve Wine upon programme completion.

The objectives of the programme are as follow:

  1. Describe basic factors affecting wine style, flavor, quality and price.
  2. Apply basic techniques to taste, examine and evaluate wines.
  3. List major grape varietals and their characteristics.
  4. Recommend wine in marketable ways.
  5. Identify major wine producing countries and regions.
  6. Pairing wine with food.
  7. Identify various considerations related to the consumption of alcoholic beverages.
  8. Present, open, decant and serve different types of wine.

Dress Code: Club Standard
Notes: A buffet spread will be provided to complement the wines. Numbers are limited to 40 participants. Members are requested to book at least 48 hours in advance, to facilitate better planning in food and service.

The 2000 Bordeaux was, and perhaps still is, hailed as the wine of the Millennium, with perfectly ripened grapes, delightful freshness, soft tannins and seriously impressive harmony (paraphrasing Jancis Robinson from her Financial Times article of 27 Mar 2010.

We will be tasting 6 moderately priced, but in our view good quality and value for money wines, to see what 15 years of ageing has added to the wines. In alphabetical order, they are:

  1. Cantemerle
  2. Dassault
  3. Durfort Vivens
  4. La Gaffeliere
  5. Larrivet-Haut Brion
  6. Les Ormes De Pez

 

1.Chateau Cantemerle (Haut-Medoc) (Fifth Growth) is located in the commune of Macau. The estate dates back to the 12th century. It was sold to French insurance group Les Mutuelles d'Assurance du Bâtiment et des Travaux Public in 1981. At the time of its purchase, the estate was in near ruins. Of the 115 hectares (284 acres) that were planted when the estate was classified in 1855, only 20 ha (49 acres) were in working condition in 1980. The new owners invested heavily, planting an additional 70 hectares (174 acres) and purchasing new oak barrels to replace the use of stainless steel tanks. New harvesting and grape sorting equipment was installed. The estate converted the majority of its Cabernet Franc plantings into Cabernet Sauvignon and Petit Verdot. On average, the vines are now 30 years old. The Chateau annually produces on average 25,000 cases of its Grand vin. The typical blend is a composition of 50% Cabernet Sauvignon, 40% Merlot, 5% Cabernet Franc and 5% Petit Verdot.

 

2.Chateau Dassault (St Emilion) (Grand Cru Classe) - purchased in 1955 by Marcel Dassault, who renovated the estate as well as gave his name to it. Château Dassault has been a Grand Cru Classé since 1969. Grandson Laurent Dassault currently manages the estate. The vat room was fully renovated and grapes are carefully inspected twice on vibrating sorting tables. The grapes from each vineyard are fermented separately. There is also a partnership with Baron de Rothchild which involves Dassault taking a small stake in Rieussec and l'Evangile, in exchange for technical assistance.

 

3.Château Durfort-Vivens (Margaux) (Second Growth) is owned by the Lurton family, which also owns Château Brane-Cantenac and Château Climens. The Chateau has 86.5 acres planted with Cabernet Sauvignon, Merlot, and Cabernet Franc. In 1937 the estate was bought by the company owning Château Margaux, whose main shareholder at that time was the Lurton family, resulting in the wine being made in the Margaux cellars. In 1961 Lucien Lurton acquired the vineyard. In 1992, his son Gonzague inherited the property. He modernized its operation with a view to developing the terroir's unique qualities.

 

4.Château La Gaffelière (Saint Emilion) (Premier Grands Crus Classés B). Located just west of Château Pavie. Family owned by the Malet-Roquefort family for three centuries. The vineyard area extends 22 hectares, with a grape variety of 66% Merlot, and the remainder split between Cabernet Franc and Cabernet Sauvignon. Chateau La Gaffelière annually produces on average 10,000 cases of the Grand vin.

 

5.Larrivet Haut Brion (Pessac Leognan) The estate came into being with the original name of La Rivette in the 1800′s. Today the estate is managed by the Gervoson family who took over the property in 1987. Vineyard comprises 55% Merlot, 40% Cabernet Sauvignon and 5% Cabernet Franc. Vines average 25 years of age. The terroir is a mixture of gravel and sand. The red wines of Chateau Larrivet Haut Brion are vinified in stainless steel vats and aged in 70% new oak for between 15 and 18 months. Michel Rolland is the consultant.

 

6.Château Les Ormes-de-Pez (Saint-Estèphe) (Cru Bourgeois Exceptionnels) The estate is owned by the Cazes family, also owners of Château Lynch-Bages. For many years the vinification took place at Lynch-Bages. The cuvier and chai of Ormes-de-Pez were modernised in 1981. The vineyard area, divided into two blocks north and south of the village of Saint-Estèphe, extends 33 hectares (82 acres), with the grape varieties of 70% Cabernet Sauvignon, 10% Cabernet Franc and 20% Merlot. The annual production is typically 15,000 cases.

The event aims to welcome over 10,000 visitors over four days of wine tastings, masterclasses and promotional events with over 70 visiting winemakers from every region of the globe. Some 300 wines will be available for tasting and also for sale, at special prices.
 

Wine Fiesta – 24 to 26 October 2014
The event offers a one-stop shopping, tasting and educational experience for everyone who loves wine – from the newbie to the connoisseur. There is something here for every palate and budget.
 
To top off the experience, Singapore’s largest outdoor wine fair will be set amidst an unbeatable backdrop of Singapore’s rejuvenated city centre, at Clifford Square. Visitors can kick back and enjoy some choice tipples with a breathtaking view of the sea as well as the city skyline, including the iconic Marina Bay Sands building.
 
In addition, those who want to boost their knowledge of wine can sit and sip with wine experts and winemakers who will be conducting free masterclasses every 45 minutes. There will be 10 masterclasses a day by guest speakers, including renowned wine expert and founder of the German Wine Guide, Mr Joel Payne. The masterclasses will touch upon a wide variety of topics, ranging from the technicalities of viticulture to fun sessions which pair wines with local food. For example, find out what Singapore’s top sommeliers are raving about this year at the “Sommeliers’ Choice” masterclass and learn more about the grapes that go into their favourite wines; or take a tour of North America and South America at the “California to Mendoza” masterclass.

Mr Payne will also be present, together with key winemakers, at a very special wine pairing dinner on opening night where guests can sample 60 iconic wines. The Straits Wine Company and DBS present the annual outdoor Singapore Wine Fiesta, which is open to the public, trade and press. The event aims to welcome over 10,000 visitors over four days of wine tastings, masterclasses and promotional events with over 70 visiting winemakers from every region of the globe. Some 300 wines will be available for tasting and also for sale, at special prices.
 

Wine Fiesta – 24 to 26 October 2014
The event offers a one-stop shopping, tasting and educational experience for everyone who loves wine – from the newbie to the connoisseur. There is something here for every palate and budget.
 
To top off the experience, Singapore’s largest outdoor wine fair will be set amidst an unbeatable backdrop of Singapore’s rejuvenated city centre, at Clifford Square. Visitors can kick back and enjoy some choice tipples with a breathtaking view of the sea as well as the city skyline, including the iconic Marina Bay Sands building.
 
In addition, those who want to boost their knowledge of wine can sit and sip with wine experts and winemakers who will be conducting free masterclasses every 45 minutes. There will be 10 masterclasses a day by guest speakers, including renowned wine expert and founder of the German Wine Guide, Mr Joel Payne. The masterclasses will touch upon a wide variety of topics, ranging from the technicalities of viticulture to fun sessions which pair wines with local food. For example, find out what Singapore’s top sommeliers are raving about this year at the “Sommeliers’ Choice” masterclass and learn more about the grapes that go into their favourite wines; or take a tour of North America and South America at the “California to Mendoza” masterclass.
 
 
To celebrate the debut of the Women’s Tennis Association Finals in Singapore, which happens in Singapore in the same week as Wine Fiesta, the wines will be accompanied by a bespoke tennis-inspired menu crafted by The Fullerton Bay Hotel.

Felicitas Global is organizing a trade event for a group of wineries belonging to a  consortium producing Brunello di Montalcino wines, coming from Italy. It will be held in The Hilton Hotel, Singapore on  November 20th 2014. The  event will include B2B meetings, seminars and walk around tasting of  wines.
 
This is a trade event and  concentrates mainly on importers and Ho/Re/Ca.

In anticipation of this festival, Head Chef Isaac Tan of Bedrock Bar& Grill embarked on a culinary tour of Western Australia with the crew early this year in June, exploring lands and experiencing the stories of farmers and their produce. Upon his return to Bedrock’s kitchen, Chef Isaac has created a total of 3 menus in honour of Western Australian produce.
