yoshi_bigYoshi is the General Manager and Sommelier at the prestigious Japanese resaurant Shabu Shabu. Originally from Tokyo, Japan Yoshi has a background as a chef and over 8 years of experience as a Sommelier, including a position as Head Waiter/Sommelier at Joel Robuchon's Michelin 3-stars restaurant.

He enjoys wine, particularly those that deliver good value and quality which made him an ideal Guest Nose at The Local Nose!

Derrick Lim: Guest Nose July 2010

Derrick Lim started his career as a musician but later found his passion for the grape. He is certified by both the Society of Wine Educators as a Certified Specialist of Wines (CSW) and by the Court of Master Sommelier as a Certified Sommelier.

In mid 2007, joined St. Regis Hotel Singapore as a Chef Sommelier. He recently left (in March 2010) to start up his own wine consultancy, Wine Repertoire, to fulfill his dream of working with diverse establishments to create some of Singapore's most exciting wine lists and wine programs.

Currently,Derrick is the Consulting Sommelier for Imperial Treasure Restaurants Group, the fastest growing Chinese Cuisines chain in Singapore today, and the Waku Ghin Restaurant by one of most renowned chefs, Tetsuya.

Derrick also judges for numerous wine competitions including; Wines & Spirits Asia 2010, Asia Style Awards 2008 and 2009, American Express Tower Club Annual Wine Challenge 2007, 2008 and 2009, Alsace Meets Asia Culinary Challenge 2007 and 2008, St. Emilion Grand Cru Classés Challenge 2008, 2009…And now The Local Nose!

Ervin Tang - Guest Nose for June 2010


ervinErvin  Tang is TLN's second guest nose. Ervin has been in the F&B industry for almost five years, and has learnt a lot about food and wines.

He started off as a trainee 6 years back and is now the Sommelier at The Cliff Restaurant. Wine captured his attention and his interest grew gradually when he learned from managers and sommeliers about wine. Not only does Ervin love to consume wine, but discovering and understanding wine has become a passion; as he believes each vintage tells a different stories about a wine.

Entering his fourth year at The Cliff, Ervin is pursuing the WSET Advanced certification and also looking forward to the Certified Specialist in Wine course as well.

Morgun Pathi: Guest Nose for May 2010

morgunTLN's first Guest Nose is Morgun Pathi, local wine aficiondo and wine educator.  Morgun is a regular contributor to TLN's Blog and writes about wine tastings and wine dinners.

Morgun's interest in wine started more as a hobby, but by nature he couldn't help himself from diving deeply into this  fascinating and exciting new "hobby". 

His nature and keen interest led him to pursue formal wine studies, first at the Singapore Polytechnic, then through the UK-based Wine and Spirit Education Trust Advanced Certification program, the introductory level of Court of Master Sommelier course, and most recently he completed the US-based Certified Specialist in Wine (CSW) certification.

Morgun has a background in education and small business consulting and is now keen on spreading the good word about the grape by conducting wine appreciation classes and writing for The Local Nose.
